Hi

 

we have looked in coles foodland and woolworths and cannot find pudding rice anywhere does anyone know of anywhere we can get some ?

Do you mean creamy rice pudding in a tin, that you have for pudding with a blob of jam??? If so then woolies Homebrand do it. its ok not as creamy as ambrosia, but not too bad

Here's a nice recipe for Rice Pudding...it and is creamy inside.gets a nice caramalised skin

 

110g (4 oz for non metrics) short grain rice

845 mls milk (1 1/2 pints)

50g butter (2 oz)

75g castor sugar (3 oz)

3 eggs

grated rind 1/2 lemon

frshly grated nutmeg.

 

Preheat oven to 150 C (300F)

well butter a 1 litre (2 pint) dish

 

Add rice and milk into a pan.

Slowly bring it to almost simmering.

Let it cook very gently until rice tender... about 10 mins.

 

Add sugar and butter.

Stir until dissolved and melted.

Take pan off heat and cool a little.

Beat the eggs well and stir in.

Add lemon zest.

 

Pour mixture into baking dish.

Sprinkle on grated nutmeg.

Bake for 30-40 mins- or longer if you like it thicker.

 

 

Or you can go out and buy a tin of the stuff.

The definitive answer regarding rice pudding in Australia is that you can't get it.  You have to be born down a coalmine in Yorkshire to know what "Pudding Rice" is, and no, Arborio won't do.  Visitors to and from the UK are under strict instructions to bring bags from Tesco or Asda; I currently have two bags which I am willing to trade for, say, a Ferrari or two.
